Based on the gyuto, Japan’s answer to the European chef’s knife, the blade is thinner than traditional European knives, allowing for more delicate work, but double-beveled for convenience and durability. Designed to handle most tasks in the kitchen, this versatile blade can be used to slice or to chop, using the classic “rocking” motion. Hand-forged in 1095 high-carbon steel, which is easier to sharpen at home and holds an edge longer than stainless steel, each knife is finished with a full tang octagonal handle in rosewood or spalted maple.
