Though traditionally used for delicate work off of the cutting board, this paring knife could easily swing as a petty knife for small tasks of chopping or slicing, and makes a great addition to a bar setup. Hand-forged in 1095 high-carbon steel, which is easier to sharpen at home and holds an edge longer than stainless steel, each knife is finished with a full tang octagonal handle in rosewood or spalted maple.
