This knife, based on the traditional Japanese nakiri, is a vegetable cleaver designed for the “push” cutting motion. With its thin, double-beveled blade, this knife allows for the neat preparation of all kinds of fruits and vegetables, and particularly shines when chiffonading herbs. The wide blade also serves as a scoop for moving ingredients from the cutting board to the mise-en-place. Hand-forged in 1095 high-carbon steel, which is easier to sharpen at home and holds an edge longer than stainless steel, each knife is finished with a full tang octagonal handle in rosewood or spalted maple.
