This knife, based on the traditional Japanese nakiri, is a vegetable cleaver designed for the “push” cutting motion. With its thin, double-beveled blade, this knife allows for the neat preparation of all kinds of fruits and vegetables, and particularly shines when chiffonading herbs. The wide blade also serves as a scoop for moving ingredients from the cutting board to the mise-en-place. Hand-forged in 1095 high-carbon steel, which is easier to sharpen at home and holds an edge longer than stainless steel, each knife is finished with a full tang octagonal handle in rosewood or spalted maple.
Inspired by traditional Japanese and European knifemakers, Fell Knives are handmade by Nicholas Berkofsky in his home workshop in Los Angeles. Read more about his process and inspiration here.
Each knife is made to order with a lead time of 8-12 weeks.
