A versatile chef's knife crafted in the classic Santoku shape, great for chopping and slicing vegetables, fish, or meat. Well balanced with a 7 inch blade and a 5 inch integrated handle, which is textured for better grip. Made from a composite three-ply molybdenum vanadium steel, which adds hardness, strength, and wear resistance to the stainless steel blade. Can be resharpened at home with a whetstone or professionally on a belt grinder.
Born in 1915, Sori Yanagi was a pioneer of Japanese postwar industrial design. Throughout his long career, he created a wide variety of beautiful, useful, and lasting products for everyday life. His stainless steel work is produced in Tsubame-sanjo, Niigata, the center of metalworking in Japan.
