Handcrafted in Tsubamesanjo, Niigata, an historic center of metal work in Japan, in the rectangular Kansai style, this pan is perfect for making fluffy rolled omelettes. Add a small amount of dashi to three beaten eggs and cook in thin layers, rolling as you go, for the classic dashi maki tamago. The pan is made from solid copper with an interior coating of tin, to create a naturally non-reactive and non-stick surface for your eggs.

Use and care instructions:
The pan arrives with the handle unattached — use the small brass nail, included, and a hammer to attach the handle before use. Never heat the pan empty or over high heat, which can cause warping and damage to the tin lining. Hand wash with soap and a gentle scrubber, so as not to scratch the tin and copper. Dry thoroughly to prevent rust. Copper will naturally oxidize with use — you can polish it if you'd like, or allow the natural patina to develop.
